Who says mashed potatoes are only for special occasions like Thanksgiving or a dinner out? This dish pairs very well with grilled fish, roast chicken, or even sausages. And the best part is it's easy enough to make during the week.

Ingredients
Potatoes- 3 big or 4 small pieces (Indian sizes)
*Dairy - about 1/2 cup
Butter - 3 tablespoons
Salt and pepper - to taste
Method
1. Peel and boil the potatoes either on the stove, or in a pressure cooker. Shape does not matter because they will be mashed. If it's easier to cut them and boil go ahead. I prefer to keep them whole so they retain steam.
2. Use a fork to mash the potatoes. Add in the butter, salt, and pepper, and whatever other seasonings you would like.
3. In the meantime, warm your dairy (milk / cream), and then stream it in, mixing as you go along. You may not even need all the dairy, see how they shape up. The consistency should be soft and fluffy, not heavy.
I like making a hole in the middle for a pat of butter before serving.
Notes
Taste as you mix and go. Potatoes are good with a bit of salt, but depending on your taste, adjust as needed. If eating later / next day, heat in microwave with some more dairy.
*Use milk / cream, or a combination, depending on how indulgent you want to be. To make this dairy free, I suppose you could use almond / coconut milk, but I've never tried that.
**Optional add ins: grated cheese, garlic powder, garlic chips, fresh garlic, oregano, chicken broth, cheese spread.
