Oatmeal Cookies

My Mom makes the most amazing oatmeal cookies, but I'll share her tried and tested recipe for another time. For now, sharing a simpler version that works well for working professionals, busy students, or anyone who wants a quick tea-time treat. These cookies don't call for complicated ingredients, and are fairly easy to make if you have some oats on hand. Everything else can be found in your pantry.


Ingredients

1 cup all-purpose flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

200 grams of unsalted butter, softened*

1/2 cup of light brown sugar**

1/2 cup of regular white sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups Quaker oats (or any brand)


* If you are using salted butter, then omit the additional 1/2 teaspoon of salt.

** You can reduce the sugar slightly if needed to about 3/4 cup total.


Method


Pre-heat oven to 350F / 180C.


Prepare cookie sheets lightly oiling / buttering them so your cookies don't stick later.


In a mixing bowl, mix flour, baking powder, baking soda, and salt.


In another bowl, use a hand mixer to beat butter and sugar until it becomes fluffy and the color lightens. This should not take more than two to three minutes.


Add the egg and vanilla to the butter mixture, and mix for another minute to combine.


Add in your flour mixture, and stir with a spatula until combined.


Gradually add the oats in and mix until combined. The mixture will seem dry, but don't worry. See the image below for guidance.


Now, it's time to get your cookie dough onto your baking sheets. Use your hands to make tablespoon sized balls. Place on cookie sheet, and then press down with your fingers or a spatula to flatten the cookie. Keep around 2 inches between each cookie. I fit around 12 cookies per sheet.


Bake for about 12 to 15 minutes, depending on how golden you like your cookies.


Cool completely on the baking sheet, then move onto a rack. Once the cookies are 100% cool, transfer to an air tight container.
