Sali = fried matchstick potatoes. Boti = mutton. This is a slow cooked mutton dish made in Parsi households, topped with the fried potato sticks. It's usually a celebration dish, but easy enough to make whenever you want to, at home. Chicken can be used too!
I recently attempted this iconic dish to celebrate the birthday of someone very special. I used a base recipe from a traditional chef on YouTube who cooked this for 1.5 hours on coal, but this revised version is perfect for the novice home chef, using a pressure cooker.
Don't skip the "sali" fried potatoes on top - there is something glorious about the meaty dish, topped with crunchy aloo! If you don't have potato sali on hand, you can cheat like I did and use crushed potato chips from a bag.

Ingredients:
1 kg mutton leg pieces
1/2 cup of vegetable oil
2 onions
4 teaspoons of fresh ginger garlic paste
5 ripe tomatoes, pureed in a mixie
2 teaspoons red chilli powder (more if you like it spicy)
1 teaspoons turmeric powder
2 fresh green chillies, chopped fine (more if you like it spicy)
1 teaspoon cumin powder
1 teaspoon garam masala powder
2 teaspoons salt (or to taste)
2 liters water
Method:
Heat oil
Fry onions till brown
Add ginger garlic paste
Add the tomato puree
Add red chilli powder, turmeric powder, and chopped green chilies
Add the salt + water
Add the mutton in, and pressure cook
Once gravy has reduced, add cumin powder and garam masala
Serve mutton topped with potato sali (matchstick fried potatoes), or crushed potato chips which is easier.
