Prawn Aglio Olio Pasta

There is nothing more satisfying and glorious than this simple pasta dish made with capellini (angel hair pasta); and succulent prawns. Hope you don't plan to kiss anyone after, since garlic is a main feature of this dish.


Ingredients

Capellini 250 grams (about half a packet)

Fresh parsley- chopped; about a handful

Garlic- about 5-6 cloves, chopped fine

Parmesan cheese; grated- handful

Red chilli flakes - 2 teaspoons (more if you like spicy)

Salt - two teaspoons for the pasta water; rest to taste

Olive oil - 2 teaspoons for the paste water; 1/2 cup for the sauce

Prawns- about 200 grams


Method


1. Fill a large pot with about 2 liters of water, and bring to a boil, along with two teaspoons of olive oil; and two teaspoons of salt. Keep ready.


2. Heat 1/2 cup olive oil gently on the stove on low/medium heat. Add in chopped garlic, and stir until fragrant. Before the garlic changes color, add the red chilli flakes. This is a critical step, the garlic is not to brown / burn. It looks like a lot of oil, but this forms the base of the sauce. Salt the olive oil, generously, since it will be difficult to do this once the pasta goes in.


3. Cook the capellini in the boiling water until done. Since it is so stringy this does not take more than a minute or two. Transfer the cooked pasta into your olive oil sauce. Make sure the heat is on low. Let the pasta absorb the sauce.


4. Add in your prawns, and stir gently. I like using tongs, which makes it easy. The heat from the pasta will cook the prawns. Do not increase the heat for fear of under-cooked prawns. Trust the process, the prawns WILL get cooked.


5. Once everything comes together - add the fresh parsley, and Parmesan (optional), and serve, topped with some additional parsley and maybe some garlic bread.
